Avocado Pie

I don't know if anyone but the Livingston's is crazy enough to love this Avocado Pie, but I'm putting it out here anyway. It really is my favorite dessert.

Avocado Pie
Crust
1.5 cup coconut
1.5 cup pecans or walnuts
.5 tsp salt
.5 cup Medjool dates
Process ingredients one by one in Vitamix or Blendtec blender in this order until you reach a consistency that can be patted into a pie pan.

Mousse
.5 cup Medjool dates soaked
.5 cup agave
1.5 tsp vanilla
.5 cup water
Process these until dates are completely blended.
Then add
1.5 cup mashed avocado
2/3 - 3/4 cup cocoa (adding more makes a richer taste)
Process the avocado and cocoa until creamy and smooth.

Add filling to pie crust and chill in refrigerator. Top with whipping cream if desired.

The Best Pie Crust

I won 2nd place in our ward pie making contest with this crust! Its the best!

2 cups Flour
2/3 cups shortening
1/8 tsp salt
1/3 cup cool water

Sift together flour and salt into mixing bowl. Cut or rub shortening until evenly distributed and granular in appearance, about 10 minutes. Add water, mix until dough is just formed. Chill and hour for ease in handling. Bake at 425 for 45 minutes with foil on. Take off foil last 10 minutes.

Lemon Bars

crust:
1 1/2 c. flour
2/3 c. powdered sugar
1/2 teaspoon salt
3/4 c. cold butter

Preheat oven to 325 degrees F. Mix flour, powdered sugar, salt. Cut cold butter into 1/4 inch slices and cut into flour mixture. Mix to fine crumb stage. Press evenly into the bottom of a greased 9 by 13 inch pan. Bake 20 min.

Filling:
3 eggs
1 1/2 c. sugar
3 Tbs. flour
1/3 cup lemon juice
2 tsp. lemon rind, grated
Powdered sugar, for topping

Beat eggs, add remaining ingredients, except additional powdered sugar. Mix well. Pour lemon mixture over hot crust, increase heat to 350 degrees F. Bake another 20 min. until golden. Sift powdered sugar onto bars while hot. Cool in pan on wire rack. Cut into small squares when throughly cool. Cover and store in refrigerator. Serve chilled. Makes 20.

Chocolate Strawberry Icecream Sandwiches

2 3/4 cup flour, plus some dusting
1/2 cup cocoa powder
2 1/2 tsp baking powder
1/4 tsp salt
12 Tbl butter(1 1/2 sticks)
1 1/2 tsp vanilla
1 1/2 cup sugar
2 large eggs
1 Tbl milk
2 - 2 1/2 pints strawberry icecream, softened

Combine butter, vanilla, sugar; mix. Add eggs and milk; mix. Add combined dry ingredients, mix slowly. Divide dough in half and shape in flat disks. Wrap each in plastic wrap and chill about 1 hour or until firm. Roll to 1/8" thick and cut out with cookie cutters. Place on parchment and chill again about 30 minutes. Prick holes with a fork. Bake until just firm (about 12-15 minutes). Let cool on baking sheet. Spoon 1/2" thick softened ice cream on underside of half of the cookies. Transfer immediately to freezer to harden. Makes 24

Mile High Pie by Pete and Colleen

(This is Colleen's shower dessert)

Put 2 egg whites at room temperature in a large bowl;
add:
1 C sugar
pinch of salt
1- 12 oz defrosted strawberries
1 Tbs lemon juice

Beat 20 minutes with regular mixer or 10 minutes with Bosch mixer.

Fold in:
1- 8 oz thawed Kool Whip

Put in shell in 9X13 pan. Sprinkle with nuts and freeze. If you don’t want to use fresh eggs you can use reconstituted egg powder or pasteurized egg whites from a carton to equal 2 whites.

Fresh Peach Pie by Pete and Colleen

3 C sliced fresh peaches
2 Tbs lemon juice
2/3 C sugar

Mix together and let set 1 hour. Pour off the juice and thicken with:
2 Tbs corn starch
2 Tbs butter
1 tsp almond flavor

Put peaches in pie shell and cover with sauce. Serve with cream.

Cocoa Mint Sandwiches by Pete and Colleen

Cream together:
¾ C margarine
1 C sugar
1 egg
½ tsp vanilla

add:
2 ¼ c flour
1/3 c cocoa powder
1 tsp baking powder
1 tsp soda
½ tsp salt
¼ c milk

Mix it well and divide in half. Roll into 2”roll on waxed paper and roll up, freeze till firm, slice 1/8” thick. Bake 325 for 8-10 minutes or until set up. When cool put 2 together with icing.

Icing:

3 Tbs margarine1

½ c powdered sugar

green food color

1-2 drops oil of peppermint

1 Tbs milk

Mix well and put between 2 cookies.

Grandma June's Super Cake Mix

To a box cake mix add:
2 Tbs flour
2 Tbs sugar
¼ tsp baking powder
and 1 more egg than the recipe calls for.

Mix and cook as directed. It gives a box cake more texture and homemade taste.

Cream Cheese Brownies (Pat) by Pete and Colleen


1 ½ stick melted margarine
3 eggs
2 oz powdered chocolate
-mix well and add:

1 Tbs vanilla
1 ½ c flour
1 ½ c sugar
1 ½ tsp baking powder
¾ c chopped nuts
Mix ingredients well and put in a 12X17 sheet cake pan.

Add the following in a separate bowl:
1- 8 oz softened cream cheese
1 cube softened margarine
2 eggs
3 Tbs flour
3/8 c nuts
1 tsp vanilla
¾ c sugar
Mix ingredients together and put on top of chocolate mixture bake at 350 for 30-35 minutes, frost while still warm with:

ICING
1 sq chocolate
¼ c margarine
2 oz cream cheese
1 tsp vanilla
3 Tbs milk
Heat for 1 minute add to 1 lb. powdered sugar and beat well. Frost warm brownies.

Apple Dumplings by Pete and Colleen

Sauce- make up before you do the dumplings. Cook until sugar is dissolved.

2 c sugar

2 c water

3/4 tsp cinnamon

1/4 tsp nutmeg

6 drops red food coloring (if wanted)

3 Tbs. margarine


Dumplings

2 c flour

2 tsp baking powder

1 tsp salt

1 c shortening

1/3 c milk

6 medium apples, peeled and cored (you can use them whole, slice them or grind in a course grinder)


Sift together dry ingredients, cut in shortening till mixture resembles coarse crumbles. Add milk all at once and stir just until flour is moistened. In lightly floured board roll about 1/4" thick into a 18/12 rectangle. Cut into 6 squares and put apple in each square, moisten edges and fold corners up to seal them. Put in 8X12 pan and pour sauce in the bottom. Bake at 375 for 35 minutes or until apples are done. Serve warm with cream.
