Mom's Cafe` Rio Salad

Pork Roast ~
1 Pork Roast
2 Cans El Pato tomato sauce (yellow can)
3 Cans tomato sauce or equivalent 2 cans of ketchup
1 cup brown sugar
4 cloves garlic

Cook roast in crock pot until tender, shred and season with salt and pepper.
Add ingredients and cook another hour. These sauce ingredients are for a very large roast. I would recommend halfing for a smaller roast.

Salad Dressing ~
1 envelope buttermilk ranch dressing
1 c. mayo
1 c. buttermilk
1 cup sour cream
1 cup cilantro(cut in leaves and stems)
3 tomatoes
3 cloves garlic
¼ tsp. taco seasoning

Blend all ingredients in blender. This makes a lot.

Rice ~
2 c. water
2 chicken bouillon cubes
1/2 tsp. cumin
1 clove garlic
3 chopped green onions
3 sprigs cilantro chopped
1 cup rice

Salsa ~
1 can each drained: corn & black beans
3 tomatoes chopped
1 bunch cilantro chopped
¼ c. green onion chopped
2 avocados diced
1 pkg. dry Italian dressing

Use flour tortillas, cheese, lettuce.
